4 Ingredient Roasted Beets and Almond Crusted Goats Cheese Snack

  • 2 golden beets
  • 4 ounces of goats cheese
  • 1/2 cup sliced almonds, finely chopped
  • 1 cup balsamic vinegar


Preheat oven to 375 F. Wrap beets tightly in aluminum foil and place on a baking sheet. Roast in the oven until cooked through ( if you can easily pierce with a fork) , approx 45 to 60 minutes. Remove from oven and let cool for 10 minutes and then peel and slice into 1/4 inch slices. Set aside sliced beets on a pretty serving plate. Take your goats cheese and roll in almonds. Set the goats cheese next to the sliced beets. In a small sauce pan, add the balsamic vinegar, bring to boil and then lower to simmer and let it reduce to 1/2 its original amount. Should have the consistency of syrup. Drizzle the sliced beets and almond goats cheese with the balsamic glaze. Serve as an elegant snack or light app.
