3 Ingredient Sundried Tomato Spread

  • 1 cup raw cashews, soaked in boiling water for 10 minutes; drain and reserve 1/2 cup of the boiling liquid
  • 8 ounces sundried tomatoes in oil
  • 16 ounces fire roasted red peppers in jar


Place all ingredients in a vitamix blender and blend until smooth and creamy. If necessary, add some of the reserved boiling liquid to the blender until you get the desired texture.
